Great on everything, especially tacos and slow cooked meat. Adds flavour and colour to any dish. Make ahead of time and it will last for months in the fridge.
RED ONION PICKLES
Recipe is per Red Onion – Scale up as needed.
1/4 cup granulated sugar
1 teaspoon table salt
1/2 cup distilled white vinegar
1/2 cup water
1 large red onion
Combine all the ingredients apart from the onion into a saucepan and put on a medium heat and bring to the boil while stirring occasionally.
When this is heating up, thinly slice the red onion and set aside.
Once the pickle juice is boiling, tip the sliced onions into the saucepan and turn the heat off.
Cover and let it cool to room temperature, then put into the serving jars and place in the fridge.
