Crispy Roast Potatoes using Black Dog BBQ Lamb & Veg Rub

Roast potatoes are a staple — but they don't have to be boring. A generous coat of our Lamb & Veg Rub transforms a humble spud into something seriously craveable. Crispy on the outside, fluffy in the middle, and loaded with savoury, herbaceous flavour with 

Ingredients

Serves 4–6 as a side

  • 1kg Agria or potatoes, peeled and halved
  • 3 tbsp Black Dog BBQ Lamb & Veg Rub
  • 3 tbsp duck fat, beef tallow, or good olive oil
  • Flaky sea salt, to finish

Method

  1. Parboil — Place potatoes in cold salted water, bring to the boil and cook for 8–10 minutes until just tender at the edges. Drain well and let steam dry for 20 minutes.
  2. Rough them up — Shake the potatoes in the pot with the lid on to rough up the edges. This is what gives you the crunch.
  3. Season — Lightly coat the potatoes in tallow, olive oil, or duck fat — just enough to help the rub stick. Coat generously with the Lamb & Veg Rub. Don't be shy.
  4. Roast — Add the majority of your fat to the roasting tray and place in the oven while it preheats. When the fat is smoking hot, carefully add the seasoned potatoes in a single layer — the sizzle is what you're after. Roast at 220°C fan for 25 minutes, then flip each potato and continue roasting for a further 20–30 minutes until every side is deeply golden and crispy.
  5. Finish — Hit with a pinch of flaky salt straight out of the oven. Serve immediately.

Pitmaster's Tips

  • 🔥 Hot fat = crispy spuds. Most of your fat goes in the tray — get it smoking hot in the oven before the potatoes go in. Just a light coat on the spuds themselves to help the rub adhere.
  • 🥔 Agria potatoes are the gold standard in NZ for roasting. Waxy varieties won't give you the same fluff.
  • 🍖 Cooking a roast? These go straight in the pan alongside a lamb shoulder rubbed with the same seasoning for a cohesive flavour profile.

Serving Suggestions

Pair with slow-roasted lamb shoulder, grilled chicken thighs, or as a side at your next BBQ spread. Leftovers (if there are any) reheat brilliantly in the air fryer.
